Turnip and Green Onion Salad

-Ingredients (4 servings)-

  • 1 bunch of Japanese Turnips with the greens boiled, and cut into 1/2 inch length pieces and with the turnip bulbs halved or quartered and thinly sliced
  • 2 Green onions with the greens boiled, and cut into 1/2 inch length pieces and with the white bulbs thinly sliced
  • 1/2 a Lemon zested and juiced
  • 2 tsp. Whole Grain Mustard
  • 2 Tbsp. Olive Oil
  • 1-2 tsp. Honey or Agave Nectar
  • 2 tsp. Salt

-Directions-

  1. Place the sliced turnips and onions bulbs into a mixing bowl, add salt, and mix well. Let sit for about 15 min.
  2. Squeeze the excess liquid from the turnips and onion bulbs then add the boiled and cut turnip and onion greens.
  3. Add the Lemon zest, juice, honey or agave, olive oil, and mustard. Then mix well. Salt to taste.
