Snow Pea and Potato Stir Fry

-Ingredients (4 servings)-

  • 8 ounces snow pea pods, cut into julienne strips
  • 2 large potatoes, peeled, cut into about the same lengths as the snow peas, and then cut into julienne strips
  • 1 clove garlic, minced
  • 2 Tbsp. extra virgin olive oil
  • Salt and freshly ground pepper


  1. Heat the oil in a large skillet or wok over medium-high heat. Add the potatoes and cook for about 3- 4 minutes.
  2. Add snow peas and garlic, season with salt and pepper, stir about 2-3 minutes, and then serve.
