Snow pea and boiled egg salad

-Ingredients (2 servings)-

  • 1 cup snow pea pods trimmed and blanched
  • 2 hard-cooked eggs, peeled and chopped
  • 2 Tbsp. mayonnaise
  • 1 tsp. freshly squeezed lemon juice
  • 2 tsp. whole grain mustard
  • Salt and freshly ground black pepper


  1. Stack several snow peas and slice on the diagonal into 1/4-inch-wide strips. Repeat slicing the remaining peas.
  2. In a large bowl, whisk mayonnaise, mustard, lemon juice, salt and pepper until well combined. Add sliced snow peas and; hard boiled eggs, then mix to coat.
  3. Cover and chill until cold, at least 1 hour, or up to 1 day.
