Roasted Curry Daikon and Carrots

-Ingredients (4 servings)-

  • 1/2 lb. daikon, cut into 1/2′ pieces
  • 1/2 lb. carrots, cut into 1/2’ pieces
  • 1/4 c olive oil, extra virgin
  • 1 Tbsp. curry powder
  • 1 1/2 Tbsp. kosher salt
  • 1/2 tsp. granulated garlic
  • 1/4 tsp. granulated onion
  • 1/8 tsp. lemon juice

-Directions-

  1. Preheat oven to 400°.
  2. Combine all ingredients in a medium bowl; toss to coat. Let stand for at least 15 minutes.
  3. Arrange radish and carrots pieces in a single layer on a cookie sheet; bake for 25-30 minutes or until golden brown. Flip once during baking time.
  4. Garnish with parsley & green onion.

**Adjust seasoning to taste**
