Marinated Cherry Tomato Salad

-Ingredients (4 servings)-

  • 2 cups whole cherry tomatoes
  • 1 clove garlic finely minced
  • 2 Tbsp. fresh basil thinly sliced
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 2 tsp honey
  • Salt and pepper to taste


  1. Place a pot of water on the stove and it let it come to a rolling boil. Plunge the tomatoes in the boiling water for 30 seconds. Remove tomatoes and place in iced water to stop the cooking process. Peel off the tomato skin and place into a large bowl.
  2. In a small bowl or measuring cup, mix together olive oil, lemon juice, basil, honey, salt, and pepper.
  3. Pour dressing over the peeled cherry tomatoes and gently stir to coat. Chill for at least 2 hours. Gently stir from bottom to top, coating all tomatoes, before serving.

*This recipe could also serve as a cold pasta sauce! I like this with Angel hair pasta.
