Cucumber and Yogurt Salad -Ingredients- 1 cucumber 1 cup plain yogurt 1/4 cup fresh mint, chopped 1/4-1/2 tsp. salt to taste 1/8 tsp. cayenne pepper -Directions- Peel (optional) the cucumber, cut in half lengthwise, and scoop out seeds (removing the seeds will keep the salad from becoming too watery). Dice the remaining cucumber into cubes, about 1/4 inch in size. Toss all of the ingredients together and refrigerate for about an hour or more to develop flavors. Serve and enjoy!
