Cucumber and Yogurt Salad


  • 1 cucumber
  • 1 cup plain yogurt
  • 1/4 cup fresh mint, chopped
  • 1/4-1/2 tsp. salt to taste
  • 1/8 tsp. cayenne pepper


  1. Peel (optional) the cucumber, cut in half lengthwise, and scoop out seeds (removing the seeds will keep the salad from becoming too watery).
  2. Dice the remaining cucumber into cubes, about 1/4 inch in size.  Toss all of the ingredients together and refrigerate for about an hour or more to develop flavors.
  3. Serve and enjoy!
